I remain a little big puzzled why the Celtics do not appear to have Butler ahead of at least George (Hayward comes 'free' so I get that). But, it seems they prefer George---that may well be about spacing and fit with Stevens' offense.
I think it's a mixture of a few things. George is a better fit for Stevens offense as you said. He's younger, taller, better wingspan. There are rumors that he's not the best locker room guy.
However, I think the most important thing is that Butler is a ball stopper and very ball dominant. I don't think Butler fits very well with IT.

Yes, RPM is trying to measure this, but ultimately, metrics like that can only tweak around the edges. A big part of the reason is that with few exceptions, players are substituted as part of a unit. I don't think it's truly possible to remove teammate dependency from the equation, although it's a good idea to try.

For this reason you can see significant variations in RPM for players whose performance doesn't materially change that much, but their team has: Amir going from Toronto to Boston, or Kristaps between his rookie season and last year.

I think it's as simple as not wanting to give up either this year's pick or next year's BK pick in addition to Crowder/Bradley/Brown and so on.
Could be simpler still: Chicago didn't want to wait until the free agency period to deal Butler, which is an absolute requirement for a trade with the Celtics.

Which only makes some amount of sense if the Bulls really really loved Markkanen, which is another judgment that is certainly questionable at best.

So with Phil Jackson canned, it would seem highly unlikely that Porzingis is available for anything less than a king's ransom now, right? Might as well end speculation because it's about as likely as Brow coming here?

I dont think this is totally true, is it? I think they just needed to wait to see if Hayward was going to sign. and CHI wasn't willing to wait.

Because Butler is at 19.6 with his trade kicker. Couln't BOS have given CHI Crowder, Zeller, Tatum, future picks. Celtics would then just have to move Bradley with no salary coming back in order to fit in Hayward.

Either way, if Boston put a better offer on the table, Chicago would have waited to make the deal.
