Coronado has a decent food court and was just redone. I haven't seen it in person since it was redone but I've heard very positive things about the Gran Destino Tower. It should offer views of Epcot fireworks, but if it's Epcot Forever, the show is a steaming dumpster fire so there's not much benefit there. There is an outside shot it's HarmonioUS in August so that could be worth pursuing.

So there's a few different things re: private tours. There's one where Disney gives you a lot more flexibility and perhaps may even allow you to satisfy custom asks. I believe it's $10K for a group of 6. The other one is so much per hour with a several hour minimum. I can't justify the price, but if it's once in a lifetime trip it may be worthwhile.

Alternatively if you're just looking to hit a bunch of marquee rides, there are packages devoted to just that and they're a bit more affordable.

It's hard to tell on RotR, the ride is simply not doing what it's supposed to do operationally. They're targeting 1700 an hour, occasionally hitting 1300 an hour and never for more than an hour or two a day. The boarding groups are happening because of the operational issues the ride is having. It's making the best out of a bad situation.
