I would say Chili Davis' job is as safe as any hitting coach in baseball and there is no way Papi is going to be with the team every day the year after his retirement when he has specifically said he wants to spend time with the family and do some traveling.
In one of those interview clips with Papi, he said he wants to spend time being a tourist in his own country, while gorgeous beaches were shown in the background. Too early for sure, even though it's a small country. The rest of the world is big. I'm sure he'll get wanderlust for some of it.

About Varitek, I wonder if he might go through pitching coach on the way to bench coach or manager. Dave Duncan, ex catcher, was one if the best pitching coaches, no doubt.

Re: Varitek, didn't he say he wanted to spend time with his young daughters & didn't want the travel commitment until they were older? IIRC from his retirement ceremony, they looked to be in their very early teens or perhaps a little younger.

Yes!
They are 16, 14, & 11...and then a much younger child with his 2nd wife.
The youngest needs to be older before they would consider a move back to Boston.
