I think the release is just so fast while also coming from behind his hip in a way that hides the start of the shot just enough that the goalies just have no chance. It is also tucked so tight in that the goalies can't sell out glove side -- if they do he still has space to sort of open up and burn them stick side.
But regular mortals can't both load the shot from so far back and also whip it out quickly enough to not have the goalie track the release and block it. Pasta is doing something regular people can't do, or at least not quickly enough to actually make it work.
